Noé Vandamme- Bruges Belgian Bistro 

Noé Vandamme is a food entrepreneur from Belgium. Noé likes eating and making waffles. When Noé came to the United States, he realized that there wasn’t any breakfast place that sells unique mini waffles. When Noé was born in 2003, his dad started to make these mini waffles dipped in chocolate right in their kitchen in Belgium. When Noé got into college, his dad stopped making these Belgian waffles, so Noé had to step up. Noé dropped out of college and realized that he wanted to keep waffles going and make them more. So they moved to the United States, and that’s where Bruges Belgian Bistro is located. 

Bruges Belgian Bistro is a mini place in Salt Lake City, Utah, like a coffee shop, but instead of coffee, they make waffles dipped in different flavors. There are many varieties of waffles you can choose from. Examples like a smore waffle, chicken and waffles, apple pie waffle, and even a monster waffle. 

Noé doesn’t just have the business to himself. The business is full of Noé’s family members. If it weren’t for his dad’s special waffle recipe to get Noé going, they wouldn’t be where they are now. Noé started by dipping the mini waffles into Belgian chocolate and vanilla and then letting them dry so the chocolate and vanilla would stick. After he made a decent amount of those waffles, he would go around to coffee shops and little food places to help him sell the waffles. From there on, they sell the waffles through their store, the TikTok shop, and nationwide. I’d say Bruges Belgian Bistro is slowly on the rise.
